What Makes North Indian Food Different?
North Indian cuisine is defined by its tandoor cooking, its slow-built gravies, and its reliance on layered spice blends that develop over hours — not minutes. The curries are rich and aromatic. The breads are baked to order in a clay tandoor oven at temperatures most kitchens can't reach. The biryanis are layered and sealed, cooked low and slow so every grain of rice carries flavour. And the dals — especially the classic dal makhani — simmer for hours until they reach a depth that shortcuts can't replicate.

From the tandoor: chicken tikka, lamb seekh kebab, paneer tikka, and a range of freshly baked breads — garlic naan, Peshawari naan, roti, and paratha — all cooked to order in our clay oven. Tandoor cooking is what separates a North Indian restaurant from one that just serves curry.
The curries: butter chicken, lamb rogan josh, goat curry, prawn masala, and our house specialties. Each one is built from scratch using whole spices, slow-cooked onion bases, and techniques that our kitchen has refined over 15 years in Turramurra. No packet pastes. No shortcuts.
Biryanis: our lamb and chicken biryanis are layered with basmati rice, saffron, and whole spices, then sealed and slow-cooked. This is the dum method — the traditional way — not the quick stir-fry version.
Vegetarian: paneer dishes, lentil dals, aloo gobi, chana masala, palak paneer, and more. North Indian cuisine has one of the richest vegetarian traditions of any cuisine in the world, and our menu reflects that. These aren't side dishes — they're full-flavoured mains.
